Which size to buy

The rating is the hopper capacity — how much grain the machine takes in one fill, not how much it can grind in a day. A 5 kg machine suits a household of three or four grinding once a week. A 7 kg machine suits a larger family, a joint household, or anyone who prefers to grind a fortnight at a time.

Running it well

Clean and dry the grain before it goes in, and pick out stones — the cutter and the bitter are hardened, but a stone is still a stone. Let the machine rest between long runs rather than grinding back to back, keep the air-cooled filter clear so the motor breathes, and empty the flour chamber completely between different grains so nothing carries over.
